According to ChatGPT, and my own experience, the new Outlook blanks out past email data and forward date when switching accounts, is a known problem in the new version of Outlook. Outlook has not bothered to fix this bug.  This is a problem if you want to forward or respond to an email from a personal account and not the account the email was received. Please join with me to send a message to Microsoft to fix this feature that exists in classic Outlook, as Microsoft was notified with the first introduction of new outlook and still refuses to do anything. Do Apple, Android, or Linix browsers have this problem, as it may be time to abandon Microsoft.
